No Sugar Added Banana Bread Muffins
Banana bread always sounds healthy, but most of the time it’s packed with added sugar that can spike your blood sugar and cause digestive symptoms. Sweetened with TruMonk™, our 100% pure monk fruit extract powder, this recipe contains zero added sugar and zero additives like erythritol - all while tasting delicious! To take these muffins next level, you can also add no added sugar chocolate chips and/or antioxidant-rich blueberries. And for those on a gluten-free or gluten-light diet, swap out the all-purpose flour with almond flour and enjoy!
Makes 12 Muffins
Ingredients
Dry1 cup flour (regular or almond)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon TruMonk™
Pinch of salt
Wet
3 large or 4 medium bananas, mashed
1 egg
1 teaspoon vanilla extract
2 tablespoons unsalted butter, melted
½ cup no sugar added chocolate chips or blueberries (optional)
- Preheat the oven to 350 degrees.
- Combine the mashed bananas, egg, and vanilla extract in a bowl.
- Separately, combine the dry ingredients in a mixing bowl.
- Add the banana mixture to the dry ingredients and stir to combine. Then, mix in the melted butter and chocolate chips and/or blueberries.
- Butter a 12-tin muffin pan and distribute the batter evenly among the tins.
- Bake for 20 minutes or until a toothpick inserted into the center of the muffins comes out clean.
